POTATO FILLING
3lgRusset or Idaho potatoes, peeled and sliced
  Thin
  Water
  Salt
1lgOnion, diced
3tbCorn oil
1tbSalt (or to taste)
1tsBlack pepper, freshly ground (to taste)
1lgOnion, diced fine (for topping)
1/4cCorn oil
SAVORY CHEESE FILLING
1ptSmall-curd cottage cheese or pot cheese
1 Egg, beaten
3tbButter or margarine, softened to room temperature
1tsSalt, or to taste
1/4tsWhite pepper
SWEET CHEESE FILLING
1ptSmall-curd cottage cheese or pot cheese
1 Egg, beaten
3tbButter or margarine, softened to room temperature
2tbSugar
1tsSalt, or to taste
sourcream or yogurt, for

POTATO FILLING: In a pot, boil the sliced potatoes in salted water to cover until they are tender.

While the potatoes are cooking, in a skillet, heat the corn oil. Saute the first, diced onion in the hot oil until it is a dark golden brown.

Drain the potatoes and place in a bowl. Mash them together with the sauteed onion. Season with salt and freshly ground pepper to taste and use as filling for varenikis.

In the skillet, heat the 1/4 cup of corn oil. Saute the second, finely diced onion in the oil until brown. Toss with the cooked varenikis before serving.

SAVORY CHEESE FILLING: In a mixing bowl, mash the cheese well with a fork. Beat in the egg, the soft butter or margarine, salt, and white pepper. Refrigerate the filling for at least 1 hour before using.

Serve the cooked varenikis with sour cream or yogurt on the side for topping.
